“A pressure cooker works by expelling air from the pot, and trapping steam produced from the boiling liquid to head the vessel and subsequently the ingredients that are placed inside. The high thermal heat from the steam permits cooking in half or even a quarter of the time of conventional boiling. Basically, a pressure cooker allows you to throw in a bunch of ingredients into one pot and cook it super quickly and you hope it doesn’t explode. THIS IS CYCLOCROSS.”
